Sweet & Spicy Banana Bread

I’ve never been one for following the rules and anytime I can add bacon, believe you me I WILL! I came across this delicious bacon banana bread years ago at a local store in Vancouver and while it was ok. I knew I could make it better and boy did I ever!

My pet peeve when adding bacon to sweets is that usually, the bacon pieces are always very small and typically, there is never enough chocolate.  My motto with baking if the recipe isn’t perfect, make it your own. Delicious Chocolatey Bacon Banana Bread - A Family Favourite 1

Cayenne pepper was the one item, I was nervous and excited to include. I was unsure, not knowing how it would play with the other and how much was too much, however, I knew that the right amount would make it amazing! Sometimes you have to trust your instinct and just pour it in and hope for the best! Adding cayenne pepper was the perfect addition to the smoky dry cured bacon and sweetness of the semi-sweet chocolate chips.

Spicy Banana Bread

This experiment was bang on! The Cayenne pepper, chocolate chips and bacon took an old classic comfort food and revamped it into a sweet, spicy and smokey treat for everyone to enjoy! A new take on banana bread that is delightfully sweet and spicy.

My grandma always had a freezer full of banana’s and my favourite part of our visits was that she always had a banana loaf handy. Warmed up in the microwave with butter spread on top and big glass of hot chocolate was the perfect warm up on a winters day.

This treat is the perfect way to make use of old banana’s that have gone too ripe. The best part is that it’s perfect for freezing and warming on a need to have basis.  Enjoy!

Bacon Banana Bread
Servings: 2 loaves
  • 1 cup coconut oil {or canola oil}*
  • 2 cups granulated sugar {435 grams}
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups mashed bananas
  • 3 cups all-purpose flour {385 grams}
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 3 teaspoons cinnamon
  • 1/2 lb chopped bacon
  • 1 cup Chocolate Chips
  • 2 full strips Bacon for top of bread
  1. In a medium-size bowl, mix together the oil, sugar, eggs, vanilla and mashed bananas in a bowl.

  2. Set aside. In a separate bowl, mix together the flour, salt, baking soda, baking powder, and cinnamon.

  3. Add the wet ingredients to the dry ingredients and mix just until combined. Add Bacon and Chocolate Chips. Do not overmix.

  4. Grease and flour two 9x5 loaf pans. Divide the batter between the two pans.

  5. Bake at 325 degrees for 45-50 minutes or until a toothpick inserted in the center of the loaf comes out clean.
