Peach Cookies?! Yes you read that right.. today we’re talking about what to do with those ripe peaches! If you google Peaches, you get a plethora of peach pie recipes, peach cobblers, peach crisp but you don’t hear much in way of cookies. My family will devour a plate of cookies in a day but a pie will sit in the fridge forever and likely go bad before we make a dent in it, so cookies it is!
So I found this basic cake style cookie recipe online years ago, and it’s my go-to ever since. I add different items to make different flavour cookies, so today…we add peaches! I must add in here, my husband doesn’t like peaches but he’s the only one so I thought maybe cookies might entice him.
- 1⁄2cup butter or 1⁄2 cup margarine
- 1cup sugar
- 1large egg
- 2cups all-purpose flour
- 1⁄2teaspoon baking soda
- 1⁄4teaspoon nutmeg
- 1⁄4teaspoon cinnamon
- 1⁄8teaspoon ginger
- 1⁄4teaspoon vanilla
- 1⁄8teaspoon salt, I used Kosher
- 3 medium fresh ripe peaches
This recipe is so easy and a perfect one for the kids to get involved with. You can even whip these up one night after dinner, they’re so quick and easy! First you will want to cream butter or margarine and sugar in a bowl. Come complete, add egg and beat until light and fluffy, this is also where I add the vanilla!
In another bowl mix flour, baking soda and spices. Once you’ve mixed them together, stir flour mixture into egg mixture, a little at a time. At this time, peel, pit and finely dice peaches, stir into cookie mixture. I also leave some pieces a bigger pieces of peach just for the fun of it! Lastly, drop dough by rounded teaspoonfuls onto cookie sheet to make 4 dozen small cookies, or use a tablespoon and make larger cookies, and you will end up with 2 dozen.
Throw these bad boys in the oven and bake at 375°F for 15-20 minutes until cookies are brown on top. These are incredibly moist and soft cookies so they will be easily consumable! Don’t say I didn’t warn you, just make sure you cool thoroughly as not to burn little fingers or tongues!
